We love a good steak. We always go for a good cut of meat, and this is something your butcher should help you with. In this recipe, we prepare the meal with sirloin steak, and ask for it to be sliced into 1/4 inch medallions. We use a special marinade, and we think this makes the steak. Ingredients
16oz (454g) boneless sirloin steak, sliced into ¼- inch medallions
1 tsp fine sea salt
1 tsp ground black pepper
2 tsp coconut oil
1 batch Zoodles or Cabbage Pasta
1 cup fresh spinach
1 batch Alfredo Sauce, warmed
1 cup sliced cherry tomatoes
57g (2oz) Gorgonzola cheese, crumbled
- FOR THE MARINADE
¼ cup avocado oil
¼ cup fresh lemon juice
2 cloves garlic, smashed to a paste
½ tsp dried ground rosemary
Directions
- Marinate the steak:
In a shallow bowl, combine the avocado oil, lemon juice, garlic, and rosemary. Turn the steak to coat on both sides. Cover the bowl and place it in the refrigerator for at least 1 hour or overnight to marinate. - Take the steak out of the marinade and pat it dry; discard the marinade. Season the steak with salt and pepper on all sides. In a large cast-iron skillet over medium-high heat, melt the coconut oil. Cook for 2 minutes per side for medium-rare steak, or until done to your liking.
- Toss the zoodles with the spinach in a serving dish to combine. Toss in the Alfredo sauce to coat. Place the steak on a serving platter. Serve with the tomatoes and Gorgonzola on top.
- Refrigerate in an airtight container for up to four days. Place in a lightly greased skillet over medium heat for about 3 minutes to reheat.
