Ingredients
Large ice cubes
1 cup sparkling mineral water or club soda
2 tbsp Swerve confectioners’- style sweetener
1 tsp strawberry extract or other extract of choice, or a few drops of strawberry oil
1 tbsp heavy cream (or full-fat coconut milk if dairy-free)
2 tbsp sweetened whipped cream, for garnish (omit for dairy-free)
Directions
- Fill a tall glass halfway with ice cubes. Fill the glass halfway with sparkling mineral water. Stir in the
sweetener and extract, then adjust the sweetness to taste. - Fill the glass halfway with heavy cream. Allow the cream legs to seep down into the drink without stirring. Enjoy with the sweetened whipped cream on top. This drink is best served immediately; if left overnight, it will lose its fizz.

For quick additions to treats like this, you could keep heavy cream in a whipped cream canister in your fridge.
In a canister, combine 2 cups of cream and 2 tbsp of powdered sweetener or 14 tsp of liquid stevia or similar. Then it’s already presweetened and ready to go whenever you need it.
Add a few drops of natural red food dye to this cream soda to make it pink.
