Ingredients

  • FOR THE MEATBALLS
  • 1 tbsp coconut oil

  • ¼ cup chopped onions

  • 1 tsp fine sea salt

  • 900g/2 pounds ground beef

  • 1 cup finely chopped mushrooms

  • 1 cup grated Parmesan cheese

  • 1 large egg

  • FOR THE GRAVY
  • 2 tbsp bacon fat or lard

  • 1 cup beef bone broth

  • 1 tsp coconut aminos or wheat-free tamari

  • ¼ tsp fine sea salt

  • ¼ tsp ground black pepper

  • 1 tsp fish sauce (optional, for umami flavour)

Directions

  • Preheat the oven to 180°C/350°F.
  • In a heavy-bottomed skillet, heat the coconut oil. Add the onions, season with salt, and cook for 5 minutes, or until the onions are translucent. Put the onions in a bowl to cool.
  • In a mixing bowl, combine the ground beef, mushrooms, Parmesan cheese, and egg. When the onion mixture is cool enough to touch, add it to the meat mixture and combine everything with your hands.
  • Form the meat mixture into 2-inch balls and place them on a baking sheet with a rim. Bake for 30 minutes, or until the meatballs are thoroughly cooked.
  • To make the gravy, combine all of the ingredients in a saucepan. Cook for 10 minutes, stirring frequently, or until the gravy is thick and bubbly. Serve the meatballs with the gravy on the side.
  • Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a baking dish for 5 minutes in a preheated 180°C/350°F oven, or until warmed through.
