Ingredients
½ cup unsweetened cashew milk
¼ cup Swerve confectioners’- style sweetener
4 large eggs
4 large egg yolks
1 tsp pure vanilla extract, or seeds scraped from 1 vanilla bean (about 8 inches long)
¾ cup plus
2 tbsp coconut oil
¼ cup MCT oil
1 tbsp matcha powder
½ tsp fine sea salt

Directions
- Blend the ingredients in a blender until smooth.
- Pour into an ice cream maker and churn according to the manufacturer’s instructions, which should take between 15 and 30 minutes depending on the machine. Serve immediately or place in a freezer-safe container and freeze for up to 1 month.
- Recipe Notes
Green tea ice pops are another option. If you don’t have an ice cream maker, freeze the mixture in 8 ice pop molds for at least 3 hours, or until set.
