Ingredients

  • ½ cup unsweetened cashew milk

  • ¼ cup Swerve confectioners’- style sweetener

  • 4 large eggs

  • 4 large egg yolks

  • 1 tsp pure vanilla extract, or seeds scraped from 1 vanilla bean (about 8 inches long)

  • ¾ cup plus

  • 2 tbsp coconut oil

  • ¼ cup MCT oil

  • 1 tbsp matcha powder

  • ½ tsp fine sea salt

  • SPECIAL EQUIPMENT
  • Ice cream maker

Directions

  • Blend the ingredients in a blender until smooth.
  • Pour into an ice cream maker and churn according to the manufacturer’s instructions, which should take between 15 and 30 minutes depending on the machine. Serve immediately or place in a freezer-safe container and freeze for up to 1 month.
  • Recipe Notes
    Green tea ice pops are another option. If you don’t have an ice cream maker, freeze the mixture in 8 ice pop molds for at least 3 hours, or until set.
