When you need to add a little something to a meal just to make it that bit more special, you add either a sauce or a dressing. This gorgeous Italian Dressing is one from a friend, and I want to share it with everyone because I think it’s excellent.

  • ½ cup mayonnaise

  • ⅓ cup coconut vinegar or apple cider vinegar

  • ¼ cup grated Parmesan cheese (about 30g/1 oz)

  • 2 tbsp Swerve confectioners’- style sweetener

  • 1 tbsp avocado oil or extra-virgin olive oil

  • 1 tbsp fresh lemon juice

  • 1 ½ tsp Italian seasoning

  • 1 clove garlic, minced

  • Fine sea salt


  • In a blender, combine the mayonnaise, vinegar, Parmesan, sweetener, oil, lemon juice, Italian seasoning, and garlic. Taste and season to taste, adding salt and more lemon juice or sweetener if desired.
  • Refrigerate in an airtight container for up to two weeks.
