Ingredients

  • 4 cups chopped romaine lettuce

  • 1 cup pitted black olives

  • ¼ red onion, thinly sliced

  • 4 mild pepperoncini peppers

  • 1 medium tomato, diced

  • Grated Parmesan cheese, for garnish

  • Fine sea salt and ground black pepper

  • ½ batch Italian Dressing

  • FOR THE CROUTONS
  • 1 aged Gouda or Parmesan cheese rind, about 3½ inches wide and ½ inch thick

Directions

  • Make the croutons:
    Using a 1/4-inch square cutter, cut the cheese rind into 14 1-inch squares. Place the squares about 2 inches apart on a microwavable plate. Microwave for 1 minute on high, or until the squares puff up to about twice their original size. Allow to cool completely before using. Refrigerate leftovers in an airtight container for up to 4 days.
  • In a large serving bowl, place the lettuce. Add the black olives, red onion slices, pepperoncini, diced tomato, and keto croutons on top. Season with salt and pepper to taste and garnish with grated Parmesan, keeping in mind that the Parmesan will add saltiness. Serve with the dressing on the side.
