Ingredients
2 cups chopped fresh round or plum tomatoes or quartered cherry tomatoes
½ cup chopped fresh basil leaves, plus extra for garnish
2 tbsp avocado oil or extra-virgin olive oil
3 cloves garlic, minced
1 tsp Italian seasoning
1½ tsp fine sea salt, divided
1¼ tsp ground black pepper, divided
2 tbsp unsalted butter
½ cup chicken bone broth
1½ cups heavy cream
1 cup grated Parmesan cheese (about 120g/4 oz), plus extra for garnish
1 batch Zoodles
16oz (454g) medium shrimp, peeled and deveined
½ cup shredded mozzarella cheese (about 60g/2 oz)
Directions
- In a large mixing bowl, combine the tomatoes. Stir in the basil, oil, garlic, Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cover the bowl and place it in the refrigerator for 1 hour to marinate.
- In a large cast-iron skillet over medium heat, melt the butter. Increase the heat to high and bring the broth to a boil. Reduce the heat to low and add the heavy cream and Parmesan cheese. Simmer for 5 minutes, or until the sauce has reduced slightly. Turn on the broiler to high.
- With a slotted spoon, remove the tomatoes from the marinade and place them in the skillet; discard the marinade. Arrange the zoodles on a serving platter. Top with the sauce to heat the zoodles.
- Season the shrimp with the remaining 1 tsp salt and pepper on a rimmed baking sheet. Broil the shrimp for 4 minutes, or until they turn pink. Broil the shrimp for 1 minute more after topping with the mozzarella.
- Serve the shrimp with the sauced zoodles on a platter. Garnish with basil and Parmesan cheese if desired. Refrigerate in an airtight container for up to four days. Place in a lightly greased skillet over medium heat for about 3 minutes to reheat.
