Ingredients
8 cups beef bone broth
1 cup diced onions
1 green bell pepper, thinly sliced
1 (454g/16 oz) jar salsa
¼ cup diced pickled jalapeños
1 chipotle chile pepper in adobo sauce, chopped
2½ tsp fine sea salt
2 tsp chili powder
1 tsp ground cumin
1 tsp paprika
½ tsp ground black pepper
454g (454g) boneless beef roast, cut into 2-inch cubes
2 limes, halved
- OPTIONAL GARNISH
Fresh cilantro
Shredded sharp cheddar cheese
Sour cream
Lime wedges
Directions
- In a slow cooker, combine the broth, onions, bell pepper, salsa, jalapenos, chipotle pepper, salt, and spices. Arrange the cubed beef on top of the remaining ingredients.
- Cook on low for 8 hours or high for 4 hours, covered. Shred the beef with two forks when it is tender. Stir everything together thoroughly. Fill the slow cooker halfway with lime juice. If desired, season with additional salt.
- If desired, top with fresh cilantro, cheddar cheese, sour cream, and a lime wedge. Refrigerate leftovers in an airtight container for up to 3 days. Reheat for a few minutes over medium heat, or until warmed through.
