Ingredients

  • 8 cups beef bone broth

  • 1 cup diced onions

  • 1 green bell pepper, thinly sliced

  • 1 (454g/16 oz) jar salsa

  • ¼ cup diced pickled jalapeños

  • 1 chipotle chile pepper in adobo sauce, chopped

  • 2½ tsp fine sea salt

  • 2 tsp chili powder

  • 1 tsp ground cumin

  • 1 tsp paprika

  • ½ tsp ground black pepper

  • 454g (454g) boneless beef roast, cut into 2-inch cubes

  • 2 limes, halved

  • OPTIONAL GARNISH
  • Fresh cilantro

  • Shredded sharp cheddar cheese

  • Sour cream

  • Lime wedges

Directions

  • In a slow cooker, combine the broth, onions, bell pepper, salsa, jalapenos, chipotle pepper, salt, and spices. Arrange the cubed beef on top of the remaining ingredients.
  • Cook on low for 8 hours or high for 4 hours, covered. Shred the beef with two forks when it is tender. Stir everything together thoroughly. Fill the slow cooker halfway with lime juice. If desired, season with additional salt.
  • If desired, top with fresh cilantro, cheddar cheese, sour cream, and a lime wedge. Refrigerate leftovers in an airtight container for up to 3 days. Reheat for a few minutes over medium heat, or until warmed through.
