3 cups salsa
1 (227g/8oz) package cream cheese
2 tsp fine sea salt
6 boneless, skinless chicken thighs
Double batch Cauliflower Rice, for serving
- In a 4-quart slow cooker, combine the salsa and cream cheese. Stir in the salt to combine. Serve with the chicken thighs on top. Cook on low for 6 to 8 hours, or until the chicken can be easily shredded with 2 forks. In the slow cooker, shred the meat and combine it with the creamy
sauce. You can serve it over the cauliflower rice.
- Refrigerate leftovers in an airtight container for up to 3 days. Warm in a saucepan over medium heat for 5 minutes, or until thoroughly warmed.
