Ingredients

  • 3 cups salsa

  • 1 (227g/8oz) package cream cheese

  • 2 tsp fine sea salt

  • 6 boneless, skinless chicken thighs

  • Double batch Cauliflower Rice, for serving

Directions

  • In a 4-quart slow cooker, combine the salsa and cream cheese. Stir in the salt to combine. Serve with the chicken thighs on top. Cook on low for 6 to 8 hours, or until the chicken can be easily shredded with 2 forks. In the slow cooker, shred the meat and combine it with the creamy
    sauce. You can serve it over the cauliflower rice.
  • Refrigerate leftovers in an airtight container for up to 3 days. Warm in a saucepan over medium heat for 5 minutes, or until thoroughly warmed.
